Stuffed Zucchini | Middle Eastern Recipe | Vegan by Lulu’s Vegan Life


*this recipe is traditionally made with meat but you can use mushrooms, potatoes lentils or beans


  • 10 zucchinis
  • 1 cup rice
  • 1/2 cup chopped mushroom
  • 1/2 cup chopped potatoes
  • 2 large tomatoes
  • 1 white onion
  • 1 tbsp vegan butter
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • coriander/cilantro
  • parsley
  • cumin
  • salt & pepper
  • mixed spice
  • Mankara / Zucchini corer


  1. Use the mankara to hollow out the zucchinis (click for tutorial)
  2. In a bowl, place the rice, mushrooms, potatoes, tomatoes, onion, parsley, cilantro, all the spices, butter and olive oil then mix it all together
  3. Stuff each zucchini with the mixture and place them aside
  4. Grab a pot and neatly arrange and layer the zucchinis making sure there is minimum space between them
  5. Pour a mixture of water, salt and tomato paste into the pot, enough to cover all the zucchinis
